Special Release #3 takes us to the heart of the Yirgacheffe region , where small farmers tend their coffee trees in gardens, in the shade of the forest trees, this unique batch is born: Garigari Habhab . The coffee comes from the harvests of several local growers, people who have been working the land for generations and carefully pick the cherries by hand, only when they are perfectly ripe. It is a coffee grown in the traditional garden coffee system , at altitudes exceeding 1900 meters, in an ideal climate for the slow development of the fruit. From these natural conditions is born the raw material for one of the most expressive coffees in our Special Release series.

The picked cherries arrive at the Garigari processing station , where they are combined into batches and carefully sorted. Here begins a laborious process, called Supernatural , developed to amplify the natural sweetness of the fruit without compromising clarity or balance. In the first days, the cherries are left to ferment in thick piles, in the shade, on suspended beds, being constantly turned to keep the fermentation under control. Then, in the next stage, they are moved into special plastic bags – “cocoons” where fermentation continues, this time in a more isolated and controlled environment. The final stage involves slow drying in thinner layers, until the beans reach the desired humidity. The entire process takes between 20 and 30 days and results in a deeply fruity coffee with a distinct aromatic identity.

In the cup, Garigari Habhab Supernatural is simply explosive. The aromas are juicy and layered – not just exotic fruits, but also a sensation of freshness and clarity that lasts from the first sip to the aftertaste. The dominant notes are reminiscent of watermelon and white grape , two delicate and juicy aromas, followed by denser accents of blueberry, mango and blackcurrant . As the coffee cools, tones of nectarine, ripe cherries and raspberries appear , and the texture becomes increasingly creamy, almost velvety. It is a coffee with a medium to full body , medium acidity, fruity and a high natural sweetness , well balanced by the freshness of the floral notes and the overall clarity of the profile.

This is the third coffee in the Special Release series , and for us it is one of the most expressive so far. Only 200 bags have been made, and the coffee will be available exclusively in May – both online and in our shops, where you will also be able to find it on the grinder, to try it freshly brewed.
