Finca Deborah – CM Natural "Symmetry"

Finca Deborah is one of those places where every detail counts, and this batch of "Symmetry" is a pure expression of that obsession with precision. We're talking about a Geisha grown and processed with a rare level of control, designed to bring out the natural elegance of the variety, without unnecessary artifice.

The cherries are harvested exclusively at perfect ripeness, between 20–22° Brix, then selected again and separated into micro-zones of the farm. Fermentation takes place in sealed tanks, where oxygen is completely removed and replaced with CO₂. This process of Natural Carbonic Maceration takes place slowly, at carefully controlled temperatures, to build aromatic depth and clarity.

Drying is done on tiered African beds for 20–25 days in a space where temperature, humidity and airflow are constantly regulated. The coffee is then stabilized in Grain-Pro bags to subtly absorb the aromas of the fruit and reach a perfect balance before dehulling and final selection.

Finca Deborah founder Jamison Savage is one of the pioneers of specialty coffee in Panama. His approach combines impeccable scientific precision with a rare artistic sensibility. He understood that exceptional coffee can only be achieved by respecting the cycles of nature and technological innovations alike: experimental processing, controlled fermentations and a deep respect for the soil and the local community. Through his vision, Jamison managed to take Panamanian Geisha to the world charts and transform it into a benchmark of refinement.

In the cup, this Geisha is fine and expressive. Floral notes intertwine with cherry, papaya and apricot , supported by an elegant toffee sweetness. The body is medium, the texture is velvety, and the high sweetness ties everything together in a clean, harmonious and very precise experience.
