Sebastian Ramírez – Gesha White Honey (Finca El Placer)

Sebastian Ramírez is part of the fourth generation of a family dedicated to coffee, with over a century of history behind him. When he took over the El Placer farm, he knew it was time for a radical change – traditional sales to cooperatives no longer made sense: “too much work for little profit”. So he enrolled in a Colombian coffee school, Sena, where he developed his taste, agricultural knowledge, processing techniques, roasting and brewing methods. Today, he offers free advice to other small farmers, helping them raise the level of their production. The results were not long in coming – batches like Wush Wush and Gesha White Honey have impressed in international competitions.

This batch – a Geisha processed Natural + Carbonic Maceration (White Honey) with a 144-hour fermentation – is grown at 1,744 m altitude in Quindío. After harvesting, 95% of the cherries are fully ripe, the rest semi-ripe, they are fermented anaerobically for 48 hours with CO₂ injection. This is followed by another 48 hours of dry fermentation, then 48 hours submerged in water with controlled oxygenation. The process continues with slow drying in a covered space, at carefully monitored temperature and humidity, for about 20 days, followed by a few additional days in a parabolic dryer. The berries are then stabilized in GrainPro bags for 15 days.

In the cup, this Geisha White Honey is a refined experience. It opens with notes of grapefruit, white grapes, dried dates and dried fruit , followed by accents of mint and tropical fruits . The medium acidity is complex and juicy, the taste profile is layered and balanced, and the medium body, with a velvety and silky texture, completes the harmony. The aftertaste is long, clean, floral and sweet.
