Processing of "Pink Fruits"
This batch of Pink Bourbon undergoes a controlled 120-hour fermentation, in a co-fermentation process with added fruit, which intensifies the aromatic profile and brings gustatory complexity. The method, perfected by Sebastian, adds a vibrant dimension to the coffee, without losing the clarity and balance specific to the origin.
The result is an expressive and surprising coffee, with sweet and fruity notes, velvety body and a persistent aftertaste.
