Grown at the renowned FCJ Volcan Azul farm, this coffee is the result of the work and vision of Alejo Khale Castro , one of Costa Rica's most respected producers. The farm is located near the Poás Volcano, where the altitude, fertile soils, and stable climate create an ideal terroir for developing coffees with depth and character.
Variety – Catuai
Catuai is a variety known for its natural balance, but in Alejo's batches it becomes much more than that. Careful cultivation, selective harvesting and meticulous processing bring out a bold, rich and fruity expression, a modern reinterpretation of a classic Costa Rican variety.
Processing – Natural
Natural processing is done with remarkable precision at Volcan Azul. The cherries are hand-selected and slowly dried on African beds, constantly turning for perfect fermentation control.
The result is a coffee with intense sweetness, a high body and a spectacular aromatic profile, in which dried and fresh fruits harmoniously intertwine.
Tasting notes
In the cup, this coffee offers a complex experience:
dried figs , blueberries and apricots , complemented by an elegant note of vanilla .
The body is high , textured, and the medium acidity gives it structure and freshness. The sweetness is pronounced , persistent and creates a round, pleasant aftertaste, perfect for lovers of rich and expressive natural coffees.
