Santuario Sul - Specialty Coffee
It is located in the Carmo de Minas region, an area already legendary for its microclimates and soil that is extremely favorable for specialty coffee. Here, in the heart of a mountainous region with altitudes between 1100 and 1300 meters, Luiz Paulo Dias – cultivates coffee with meticulous attention to quality and sustainability. Luiz is part of a new generation of producers who experiment with select varieties and modern processing methods, while maintaining a connection to the agricultural tradition of the region.

Santuario Sul Yellow Bourbon
The batch we chose comes from an emblematic variety for Brazil: Yellow Bourbon . Known for its natural sweetness and velvety body, Santuario Sul’s Yellow Bourbon gains depth and expressiveness thanks to the climatic conditions of Carmo de Minas. Carefully cultivated and harvested at full maturity, this variety offers you an elegant cup, with a distinct yet friendly identity – the kind of coffee that makes you come back to it with pleasure, day after day.

Natural processing with an emphasis on clarity and sweetness
The natural fermentation method is perfect for bringing out the sweet and fruity characteristics of this batch. The fruit is carefully selected and then slowly dried in a thin layer directly under the Brazilian sun. This process helps maintain a balance between full body and clear flavors, without pushing the coffee into overly fermented areas. The result is a well-structured coffee with a clean, round profile that is easy to love. Designed for both connoisseurs and those just starting out in the world of specialty coffee.
Tasting notes: balance, sweetness and comfort
Santuario Sul develops notes of milk chocolate , yellow fruits , caramel and walnut . It is a coffee from Brazil with a medium to high body, a mild and pleasant acidity, and a natural sweetness that persists in the aftertaste. Versatile and balanced, this coffee is excellent in espresso. It can also be prepared in an excellent cappuccino where it retains its personality without overwhelming. A perfect choice for those looking for a smooth coffee, but with character.
