It is located in the Carmo de Minas region, an area already legendary for its microclimates and soil that is extremely favorable for specialty coffee. Here, in the heart of a mountainous region with altitudes between 1100 and 1300 meters, Luiz Paulo Dias – cultivates coffee with meticulous attention to quality and sustainability. Luiz is part of a new generation of producers who experiment with select varieties and modern processing methods, while maintaining a connection to the agricultural tradition of the region.

The batch we chose comes from an emblematic variety for Brazil: Yellow Bourbon . Known for its natural sweetness and velvety body, Santuario Sul’s Yellow Bourbon gains depth and expressiveness thanks to the climatic conditions of Carmo de Minas. Natural processing with an emphasis on clarity and sweetness

The natural fermentation method is perfect for bringing out the sweet and fruity characteristics of this batch. The fruit is carefully selected and then slowly dried in a thin layer directly under the Brazilian sun.
