The fifth chapter in the Special Release series takes us to the heart of Colombia, to the Santa Rosa de Cabal region. Here, at the La Riviera farm, Julio Cesar Madrid and Julio Andres grow coffee with the same passion and discipline that have established them as producers of exceptional batches.
Their Yellow Bourbon, grown at 1800m altitude, benefits from ideal conditions: fertile soils, a balanced climate and a microclimate that highlights the sweet and complex character of this variety.
The coffee underwent a carefully controlled natural processing. The beans fermented inside the cherries, developing a rich aromatic profile and layers of natural sweetness. The slow and monitored drying resulted in a coffee with a high body, velvety texture and a deep aroma.
From the first sip, notes of vanilla and rum are felt, supported by a consistent layer of chocolate and complemented by exotic accents of tropical fruits . It is a generous coffee, with medium acidity and a persistent sweetness that remains long after the cup has been emptied.
