There are good coffees, there are very good coffees, and then there's Finca Deborah Geisha from Panama, a microlot that doesn't need context to impress, but which we advise you to try, because it's worth it.
This is not just any dip bag. It's Competition Reserve, our selection dedicated to coffees with international competition scores and profiles. Each sachet contains 10 grams of Geisha processed by Natural Carbonic Maceration, grown at altitudes between 1850 and 2300 meters at Finca Deborah, in the Boquete region, Panama. Produced by Jamison Savage, one of the most respected producers in the specialty coffee world.
What you'll find in the cup
It develops delicate floral notes, cherries, papaya, and ripe peaches, complemented by light toffee notes that round everything out. Low acidity, medium body, high sweetness, a profile that isn't aggressive and gives you time to discover it.
CM Natural processing involves anaerobic fermentation in carbon dioxide, with precise control of fermentation symmetry, which means it brings out the best in this variety: complexity and sweetness.
How to prepare?
You don't need any extra purchases. No dripper, no separate filter, no Japanese funnel with a name you can't pronounce.
You need a mug and hot water.
- Heat water to 90°C (or let boiling water cool for 30 seconds)
- Pour 200 ml into the mug
- Submerge the sachet and let it infuse for 5 minutes
- Gently lift the sachet a few times towards the end to even out the extraction
- Remove the sachet and enjoy
Full immersion with even extraction and full body. Simple in execution but complex in result.
