Julio Cesar Madrid comes from La Riviera, Julio Cesar Madrid's farm, located in Santa Rosa de Cabal, in the Risaralda region of Colombia — a direct tribute to the producer behind this lot. La Riviera is one of the farms recognized for its extremely meticulous approach to coffee cultivation and processing, as well as for experimenting with modern controlled fermentation methods. The farm is part of Café UBA, a group of producers that emphasizes precision, consistency, and expressive cup profiles.
This lot is made from the Pink Bourbon variety, appreciated for its floral and fruity profile, with a clarity that sometimes resembles Gesha coffees. At an altitude of 1800m, the cherries develop slowly, accumulating more sweetness and aromatic complexity.
The "Culturing Fermentation Washed" processing takes this coffee into an extremely interesting sensory area. Fermentation is carefully controlled to accentuate fruity elegance and aromatic complexity, without compromising the clarity specific to a well-executed washed coffee. The result is a vibrant, clean, and sophisticated coffee, where floral and fruity notes naturally complement each other.
It develops notes of peach, Earl Grey, and cantaloupe, supported by a medium body, balanced acidity, and a high sweetness that lingers long in the aftertaste.
