About Iris Estate


Iris Estate was created as a project of passion and professionalism, founded and run by Jamison Savage together with Saša Šestić and Elvin Siew. It is not just a farm, but a laboratory of terroir: here they explore the limits of the Geisha variety and the complexity of processing, with respect for the environment and the community. Their goal is for each batch to reflect the place where it was grown and to maintain a transparent connection between the producer and the consumer.


Processing (CM Washed)


The Carbonic Maceration (CM) method combined with washing is widespread in winemaking, but rarely applied to coffee. Jamison was among the pioneers of this process in coffee, using fine techniques to give aromatic depth to Geisha batches. The result highlights delicacy, but also gustatory structure, while maintaining clarity and volume in the cup.

Sensory profile

In the cup, this Geisha opens with delicate floral notes — jasmine — followed by tones of white fruit , peach and vanilla , with accents of peach and brown sugar. The taste is vibrant, complex, with a velvety body and a striking juiciness. The natural sweetness persists and remains present in a clean and fragrant aftertaste.
