Los Nogales , a farm located in the Huila region of Colombia, is known for its innovation and passion for its work. Although we haven't had the opportunity to visit this farm (yet), their story and processing methods have captivated us and we want to share this experience with you.

Finca Los Nogales is a family business, founded in the 1940s by the Hernández family, in the village of El Diamante, near the city of Bruselas. Over the decades, the farm has become an example of combining tradition with innovation in coffee farming. Under the leadership of Oscar Hernández , son of Ricaurte Hernández, the farm has experienced a renaissance, becoming a model of sustainability and excellence in the region. 

Oscar Hernández is a charismatic and innovative leader who, together with his team, has transformed Los Nogales into a center for research and development in the field of coffee. They collaborate with specialists such as biochemists, agricultural engineers and microbiologists to implement advanced processing methods and constantly improve the quality of the coffee produced. One of the aspects that differentiates this farm is the use of natural anaerobic processing . This complex process begins with the manual selection of coffee cherries, followed by a prolonged anaerobic fermentation, in which the beans are kept in oxygen-free environments to develop distinct flavors. After fermentation, the beans are slowly dried, under strict temperature and humidity control, to ensure an exceptional flavor profile.

The result of this meticulous process is a coffee with a complex and balanced aromatic bouquet. In the cup, you will discover notes of strawberries , tropical fruits , chocolate and a subtle hint of rum , complemented by medium acidity , a full body and a pronounced sweetness . This combination offers a special sensory experience, regardless of the chosen preparation method.
