The Sidra variety is a rare coffee variety, believed to be a natural cross between Bourbon and Typica, both varieties known for their depth and complexity of aromas. Originally from Ecuador, Sidra has been adapted to the microclimatic conditions of Jardines del Eden , where the altitude and fertile soil allow it to develop unique aromas. Sidra is distinguished by a well-balanced acidity and a rich body, with aromas ranging from floral and fruity notes to slightly spicy accents. Natural Process EF2: Intensification of Aromatic Complexity

The Natural EF2 (Extended Fermentation - Phase 2) process is an innovative processing method that adds an extended fermentation stage, enriching the complexity of the coffee's taste. The coffee cherries are carefully selected at maturity, then subjected to an extended fermentation period that allows the beans to absorb intense aromas.
