El Encanto, Colombia
El Encanto Colombia is a single-origin coffee from the Quindío region, in the heart of Colombia. It stands out for its complex, fruity and floral profile, obtained thanks to a special combination of a rare variety and innovative processing methods. The coffee has captured the attention of coffee enthusiasts around the world due to its rich and unique aroma, the result of high-precision cultivation and processing.
Maragesha variety 
The Maragesha variety is a cross between two remarkable varieties – Gesha and Maragogipe – which gives it unique characteristics. Gesha brings delicate and floral notes, while Maragogipe contributes a full body and more intense aromas. The result is a coffee with a perfect balance of tropical fruit and floral aromas, with a subtle sweetness that completes the experience. At high altitudes (approximately 1800 meters) and in the rich volcanic soils of the Quindío region, this variety reaches its maximum potential for aroma and complexity.
EF2 Natural Processing
At Jardines del Edén , Maragesha coffee undergoes the natural EF2 process, a fermentation method that enhances the complexity of the taste. In this stage, the coffee cherries are carefully selected and subjected to a controlled fermentation, through which each coffee bean develops its aromas. The EF2 process includes aerobic and anaerobic fermentation, carried out in special bags that maintain the temperature and oxygen at an optimal level. This way, the coffee acquires notes of tropical fruits, flowers, and sometimes a slight fruity acidity, with a velvety texture that remains in the memory.
