Finca Milan – Risaralda, Coffee Colombia
Located in the Milan area, part of the Colombian Risaralda region, Finca Milan is a farm that perfectly reflects the new wave of Colombian coffee: carefully tended microlots, noble varieties and an experimental approach to processing. Behind this coffee is Julio César Madrid , a producer dedicated to excellence, who transforms each harvest into an authentic expression of the area and his passion for coffee. The 1450 m altitude and rich volcanic soil provide ideal conditions for the development of beans with aromatic complexity and clarity.
Caturra
Caturra is a classic Colombian coffee variety, known for its elegance and natural balance. In the hands of Julio César Madrid, Caturra takes on a new dimension. Careful cherry selection and an innovative fermentation method give this variety a special liveliness, with a vibrant and unusually fruity aromatic profile. It is a modern reinterpretation of a traditional base – ideal for those who want to explore the complexity of a familiar origin, but with an unconventional expression.
Culturing Fermentation
The coffee is processed using a technique called Culturing Fermentation – a process that involves the introduction of selected microbiological cultures to enhance fermentation and generate deeper and more distinct aromatic profiles. This type of fermentation is carried out under controlled conditions, with extreme attention to temperature, time and pH. This process allows for the extraction of spectacular flavor notes, without compromising clarity or balance. It is the kind of processing that transforms coffee into a memorable sensory experience.
